<p>Pulite e mondate i gambi di angelica, tagliateli a pezzetti e disponeteli all’interno di un vaso insieme allo zucchero e all’alcool, quindi lasciate riposare per 4 settimane.</p>
<p>Al termine del tempo di riposo, eliminate i gambi, filtrate il liquore e imbottigliatelo. Fate riposare 4 settimane prima di consumare.</p>

<p>In una pentola, portate ad ebollizione abbondante acqua salata e lessatevi le pappardelle.</p>
<p>Nel frattempo, in una padella, scaldate 4 cucchiai di olio e saltatevi il prosciutto crudo tagliato a striscioline e fate insaporire con un pizzico di pepe, quindi aggiungete le pappardelle, la ricotta a scaglie e le foglie di menta ben lavate.</p>
<p>Saltate per un paio di minuti per distribuire bene i sapori, quindi servite subito.</p>

<p>In una tazza, preparate un’emulsione con il succo di limone, il sale, il pepe e 100 ml di olio. Disponete le fettine di carpaccio su un vassoio da portata e distribuitevi il condimento preparato. Fate riposare in frigorifero per 15 minuti.</p>
<p>Nel frattempo, pulite e mondate il sedano e il finocchio e tagliatele a fettine sottili, aiutandovi eventualmente con una mandolina. In una padella, scaldate l’olio rimasto e saltatevi per qualche istante le verdure, facendo subito sfumare con un cucchiaio di aceto balsamico. </p>
<p>Distribuite le verdure sulla carne, cospargete con il parmigiano reggiano a scaglie e servite subito.</p>

<p>In una terrina, amalgamate la ricotta al parmigiano, i semi di finocchio schiacciati, un pizzico di paprika e il basilico tritato; regolate di sale e di pepe. Riponete in frigorifero per 30 minuti.</p>
<p>Lavate le mele, privatele del torsolo e tagliatele a cubetti; bagnate questi ultimi con il succo di limone, affinché la polpa delle mele non annerisca. Con le mani inumidite, formate delle palline con la crema precedentemente preparata e disponetele tra un cubetto di mela rossa e uno di mela verde, fissandoli eventualmente con uno stuzzicadenti.</p>
<p>Servite fresco e conservate in frigorifero se non consumate subito.</p>

<p>Con le mani inumidite, formate delle piccole palline, grandi quanto una noce. </p>
<p>In una padella capiente, scaldate abbondante olio e friggete le palline fino a che non saranno dorate e disponetele su un foglio di carta assorbente per eliminare l’unto in eccesso. Servite ben calde.</p>

<p>In una pentola, portate ad ebollizione abbondante acqua salata, quindi lessate il riso per 20 minuti.</p>
<p>Nel frattempo, pulite e mondate i funghi, eliminando i gambi e lavandoli in acqua fredda corrente, quindi asciugateli, tagliateli a fettine. In una padella capiente, scaldate qualche cucchiaio di olio e cuocete i funghi a fuoco basso, regolando di sale e di pepe.</p>
<p>In una caraffa o nel bicchiere del mixer, mettete i pomodori, lavati e mondati, con le foglie di basilico, 8 cucchiai di olio, il parmigiano e una presa di sale, quindi frullate fino ad ottenere una crema omogenea.</p>
<p>A cottura ultimata, scolate il riso e trasferitelo nella padella con i funghi. Aggiungete la crema di pomodoro e saltate finché il condimento non sarà uniformemente distribuito. Servite ben caldo.</p>

<p>In una pentola a pressione, lessate il petto di pollo e, a cottura ultimata, fate raffreddare, quindi tagliate i petti di pollo a listarelle.</p>
<p>In una terrina, preparate una marinata con qualche cucchiaio di olio, il succo di limone, lo spicchio d’aglio pestato e il parmigiano reggiano. Pulite il tartufo, spazzolandolo con cura.</p>
<p>Disponete le listarelle nella terrina e ricopritele con sottili scaglie di tartufo, aiutandovi con una mandolina. Fate marinare per un paio di ore e servite.</p>

<p>Nel frattempo, in un pentolino, scaldate il latte rimanente con la vaniglia e lo zucchero, avendo cura di non portarlo ad ebollizione completa, quindi filtratelo in una caraffa, aiutandovi con un colino.</p>
<p>Versate il latte, poco a poco, nella terrina mescolando accuratamente affinché si possa ottenere una crema omogenea, quindi trasferite il tutto in un pentolino e fate cuocere a fuoco dolce, spegnendo poco prima dell’ebollizione.</p>
